The ice storm really threw me off schedule. Our power was restored Thursday morning around 9. We quickly packed up and headed home because Michael was suppose to be at work by 10 (he only had a 2 hour delay that day). Somehow I was just totally thrown off for the rest of the day and never seemed to be able to recover and get back into routine.
Friday was much better (we even attended story time at the library) and we seem to have finally resumed our normal routine.
I’m incredibly thankful for great friends who allowed us to stay with them during the day on Wednesday (they had electricity!). I’m also thankful for nearby hotels still having a few rooms available when we called in the afternoon on Wednesday. And I’m most thankful for God’s providence.
I’m praying this week will be a little less eventful and my menu plan will remain intact.
Here’s what I have planned for dinners this week (it’s a mostly easy food week for me, everyone needs a break sometimes!):
Sunday – Super Bowl party at friends’. I took these awesomely yummy red velvet cupcakes (without the Valentine-y effect) and queso dip (recipe soon) and chips.
Monday – Shepherds pie and cheese bread.
Tuesday – Fried rice, veggie sticks with Ranch, fresh fruit.
Wednesday – Out
Thursday – Chicken tortilla soup (served with homemade sour cream).
Friday – Pizza night (making a traditional pepperoni and also this yummy chicken and broccoli pizza)
Saturday – lunch: Tuna melts, veggie sticks with Ranch, fresh fruit
dinner: Eggs, toast, hash browns, fresh fruit
