Menu plan - hubby's week off

Ah, another hot week is upon us.  If you follow me on Twitter, yesterday you might have seen my tweet about this summer weather being a hindrance to my menu planning… it has been awful.

I haven’t wanted to cook (inside or out) and have been entirely too lazy.  I think part of it has to do with having been out of town the first half of summer and then Michael returning from Iraq, but really, there’s no sense in me letting my menu plan slide the way I have.  Most weeks I plan a menu, but rarely follow through with all of the meals on it and it’s bothersome to me.  I don’t do well with cooking if I don’t have a good plan in place – and then follow it.

This week I’m vowing to put forth a much better effort.  I have even scouted out a couple of new recipes to try!

We’ll see how it goes, though, because Michael is off this week studying for his big test next Monday (more on that later), and we have a tendency to change things up a bit when he’s off.

Here’s what we’ll be eating this week:

Breakfasts: yogurt with fresh fruit, cereal, toast and smoothies or pancakes

Lunches: leftovers, fruit, veggies, smoothies, cheese & crackers, boiled eggs or sandwiches

Dinners:
Monday – Steaks on the grill, mashed potatoes, green beans, homemade bread with butter
Tuesday – Skillet tacos, homemade salsa
Wednesday – Tortilla wraps (cooked chicken, lettuce, tomatoes, avocado and vinaigrette dressing)
Thursday – Grilled provolone and tomato sandwiches, fruit
Friday – Taco Grande pizza
Saturday – Chicken pasta salad
Sunday – Date night in (we order carryout)

  • I know what you mean about cooking during the summer! I don’t want to use the oven partly because it’s so hot, and partly because I want to keep our electric bill down. I use the crock pot a lot… throw it in and you’re done! You can even get crock pot liners if you don’t feel like washing it every time… I haven’t done that yet but it’s tempting. :)
