What you need:
~ Sliced bread
~ 2 eggs
~ 2 cups milk (I typically use rice milk because of Eli’s milk allergy, but it works just as well with cow milk)
~ 2 Tbsp. flour
Preheat skillet or griddle on medium low and add a spritz of oil (I use a pressurized oil pump to make a “cooking spray”).
In a 1 quart glass measuring cup or medium glass bowl, whisk all wet ingredients together. Be sure to get all the flour lumps out.
Fill a shallow bowl with the mixture.
Lightly coat a slice of bread on both sides and lay it in preheated pan.
Cook appx. 4 minutes (until golden), then flip.
Sprinkle a little cinnamon sugar on top while other side is cooking.
We enjoy it with real maple syrup on the side.
This recipe will coat 12-15 slices of bread, depending on how much you let each slice soak up.
