
Mmmm, this is so yummy, incredibly filling and one of the easiest recipes – EVER.
What you need:
~ 1lb ground beef
~ ½ medium onion, diced
~ 1½ cups uncooked brown rice
~ 1 can (15oz) can diced tomatoes and enough water to make 4 cups
~ 4 tsp. taco seasoning (roughly 2 packets)
~ Shredded cheese
How to:
~ In a large-ish pot, brown the ground beef and onion, then drain
~ Add remaining ingredients and bring to a boil
~ Reduce to low heat and simmer until rice is done (approximately 1 hour), stirring occasionally.
Serving suggestions:
~ In a bowl with shredded cheese
~ Over tortilla chips, with cheese
~ Rolled with cheese inside a corn tortilla
I realize the name suggests that this is a casserole, but it’s not! It’s a recipe of my grandmother’s and this is just what she’s always called it.

I made this with Chicken, corn and blackbeans but without the cheese, and it was amazing. Thanks for the idea. My son is on a GF/CF diet so this was a nice change for him, he loved the chips. PS we loved your Salsa recipe as well…:-)
